
EXECUTIVE CHEF
STEVEN SCAIA
Our East Coast born Executive Chef grew up in Syracuse New York and wanting to be a chef since he was ten years old. He brings with him a diverse culinary background forged from experiences in great dining cities. From Washington, D.C., Williamsburg, Atlanta, and Baltimore, he has built a knowledge and passion for locally grown and fresh ingredients which he has used to create four seasonal menus for Meritage that will delight the palate and stir the soul.
Steve dabbled in the culinary world beginning as a fry cook and dishwasher at the young age of fourteen, and two years later he was promoted to a line cook. Steve’s desire for excellence and greater knowledge led him to enroll at the Culinary Institute of America in Hyde Park, New York. After graduation, Steve’s passion took him on a journey throughout the East Coast region.
Steve’s career started in the Marriott Manager Training Program with Executive Chef, Mark Beaupre in Washington, D.C. From there, he traveled to Williamsburg, VA where he was in charge of two restaurants, learning the importance of managing high volume and fine dining before being promoted to a Banquet Chef. As a Senior Sour Chef in Atlanta, GA, Steve learned about menu design, while he maintained relationships with local vendors, and created a well-balanced culinary staff. Chef Charlie Albanos and Chef Alexander Busch provided direction and guidance during his time in Atlanta. In Baltimore, MD, he worked as an Executive Sous Chef where he learned how to manage multiple outlets at the same time.
Steve loves creating new foods and bringing them to life. He was ready for new adventures and opportunities and relocated to Redmond and the Pacific Northwest to expand his culinary experience. He likes the fresh air, the beautiful scenery, and the readily available produce and fresh seafood.
His true passion is teaching and working with his staff on a daily basis. He also enjoys seeing his team grow and develop. Steve is building a team of highly capable Chefs at Meritage, all working together to make your meal a unique experience – from the time you see and smell your dish to savoring the tantalizing flavors throughout your dining experience, and finally to the last bite of your decadent dessert and sip of coffee.
